高等职业学校酒店管理专业培养模式研究

【摘要】 据世界旅游组织预测，到2020年我国将成为世界最大的旅游目的地和第四大旅游客源国。中国政治、经济的稳定为旅游酒店业提供了良好的发展前景。21世纪旅游酒店业将获得空前的发展机遇，这一方面为旅游酒店专业人才提供了充分的就业机会和广阔的发展空间，另一方面也对酒店专业人才培养提出了更高的要求。2004年，我国政府作出了大力推进职业教育改革与发展的决定，以此为契机，高等职业教育中酒店管理专业教育也应审时度势，针对专业教育过程中存在的问题，以市场需求为导向，重新确立高职酒店管理专业建设与发展思路，突出实践性教学，进一步改革高职酒店管理专业教学内容与要求，全面提升教育教学质量，以适应社会对酒店管理专业人才的需求变化。 本文从分析当前高职酒店管理专业教育中存在的问题入手，借鉴了国外酒店专业的成功培养模式，对我国高职教育中酒店管理专业的培养模式、教育评价等做了深入地分析和研究。文章的主要内容如下： 第一部分，研究的背景、现状与存在的问题分析。该部分指出了课题研究的背景和现实意义，重点分析了当前我国高职酒店管理专业在目标定位、教学组织形式、知识结构要求上存在的突出问题。 第二部分，国外高等职业教育中酒店管理专业的比较。该部分重点介绍了瑞士洛桑模式和澳大利亚的HOSPITALITY专业培训包，总结了国外培养模式对我国高职酒店管理专业建设的启示。 第三部分，高等职业学校酒店管理专业培养模式的研究。该部分是本文的重点内容，通过对比高职、中职和本科酒店管理专业在培养目标上的区别，分析了高职酒店管理专业的培养深度与特色；对高职酒店管理专业的课程体系进行了架构，讨论了产学结合背景下的高职酒店管理专业培养模式，并结合上海科学技术职业学院的酒店管理专业教学改革方案进行了实证分析。 第四部分，高等职业学院酒店管理专业培养模式评价。该部分讨论了高职教育质量与标准观问题，提出了构建高职教育中酒店管理专业的评价体系的方法。 该论题主要是通过文献研究、对实践操作的经验总结以及比较法进行研究的。文章的创新之处在于：首先，高职教育在我国属于新兴事物，当前我国针对高职酒店管理专业培养模式的研究还没有形成体系，该文在这方面进行了比较系统地研究；其次，文章的主要观点来自于酒店行业和高职一线教学反馈，具有较强的操作性，并还形成了运行状态良好的酒店管理专业教学改革方案。更多还原

【Abstract】 According to the forecast of world tourism organization, by the year of 2020, China will be the biggest tourism destination and the forth biggest tourist source country of world. As the stability of China’s politics and economy has provided a good prospect for its development, the tourism and hotel industry will obtain a record-breaking opportunity for development in 21 century. Thus, the tourism and hotel line will need more requirements in its talents’ qualities when choosing its staff, as well as giving more job opportunities and developing space for them. In the year of 2004, our government decided to spare no efforts in the promotion of the vocational education reform. To make that a good chance, the highly vocational education in hotel management has to be optional to reorient it’s major construction and the way to development. We should focus on practicing education and further reform of the vocational education of hotel management, in accordance with the requirement of our market, to fit the change of our social requirement for hotel management talents. By putting the analysis for the current problem in the highly vocational education of hotel management as its beginning, this article discussed and researches in thoroughly the mode of training and the educational evaluation, in comparison with the advanced mode abroad.
