NO处理对马铃薯保鲜的影响

【摘要】 本试验旨在通过外源NO处理“紫花白”马铃薯,筛选出一个最有利于马铃薯块茎在室温下贮藏保鲜的NO浓度,探讨其对块茎成熟衰老中各因子如:乙烯释放量、呼吸速率、淀粉酶活性、还原糖含量、MDA含量、PPO活性、POD活性、SOD活性等的变化特性,揭示其对马铃薯块茎成熟衰老影响的生理机制,为进一步研究NO在块茎衰老中的机理和开发NO类保鲜剂提供理论依据。试验结果表明:(1)贮藏前采用NO密闭熏蒸处理,5μl·L-1的NO处理效果最好,可以在一定程度上延缓马铃薯的萌芽。(2)在贮藏过程中,NO处理可以降低马铃薯的呼吸速率和乙烯释放速率,还可以提高块茎内SOD,POD的活性,降低淀粉酶和PPO的活性,减少了MDA的积累,从而降低块茎的膜脂过氧化程度,延缓了马铃薯的衰老。(3)贮藏过程中,NO处理对马铃薯电导率和蛋白质含量的影响不显著,但可以显著延缓块茎的TSS含量的下降,延缓VC含量的下降和还原糖含量的升高,对马铃薯营养物质的保持有很大作用。

【Abstract】 In this thesis, we used NO treatment "Zihuabai" potato, selected one of the most beneficial NO treatment could maintain the best of potato freshness. The indexes of fruit senescence were investigated, such as: ethylene production rate, aspiratory rate, amylase activity, sugar content, MDA content, PPO activity, POD activity, SOD activity and so on. The physiological mechanisms of potato tuber ripening and senescence after NO treatment discussed.All above were expected to provide theoretical bases for NO commercial appliance in tuber storage.The results indicated:(1) The effects of postharvest treatment with NO fumigation were analysed, the best effect of NO treatment was 5μl·L-1 treatment, it delayed the potato tuber sprout in 20 degree.(2) In entire storess, NO reduced the rates of respiration and ethylene production, NO increased the SOD and POD activity; reduced the amylase, PPO activity and the the MDA accumulation; delayed the fruit senility.(3) NO had no remarkable influence of potato tuber conductivity and the protein content, but had remarkable influence of TSS content, defered the decreased of VC content and sugar content elevation, had major function of potato’s nutrients.
