基于RFID技术的肉制品安全监控系统分析及评价

【摘要】 进入21世纪,随着人民生活水平的不断提高,人们对肉制品的需求越来越广,然而肉制品流通过程中存在着不可控制的因素,如何控制肉制品流通过程中的安全问题,使其最小化或避免,已成为政府急需解决的民生问题,如何提高肉制品流通过程中的监控和可靠度,实现企业的竞争力与社会稳定发展的双赢局面,亟需进行系统深入的理论研究。本文主要运用RFID(无线射频识别)技术、GO-FLOW、故障树分析理论及模糊层次安全评价对肉畜养殖及肉制品加工销售流程中的监控系统进行研究、分析及计算,从系统应用领域的背景及法规环境的角度出发,对肉制品流通过程的安全性和可靠性模式进行建模分析。论文具体的主要工作和结论包括:一是对某肉制品加工企业销售流程的现场调研,重点分析肉制品供应链中销售流程中的安全隐患,研究销售流程特性,提出肉制品销售流通中的安全管理对策:二是利用RFID技术对肉畜进行个体标记并跟踪、记录肉畜饲养、监管、屠宰到销售全过程中状态数据,并基于所记录的信息,在流通过程的关键控制点上依据既定的规则对目标实行监控、干预的信息和管理,其中包括了相关标准体系和实体技术;呈是利用GO-FLOW法对流通过程的关键控制点构建流通系统模型,并对此模型进行分析;四是对分析结果可靠度低下的环节进行FTA定性分析问题并提出解决问题的措施;五是对整个监控系统进行层次分析一模糊综合安全评价,计算出整个系统安全度系数;最后,通过在某企业的实践应用,验证方法的可行性。

【Abstract】 In 21st century,with the increasing quality of life,people have more requirements on meat products.However,during the circulation of meat products,there are many factors beyond control.To control,minimize or avoid these safety factors is an urgent issue of people’s livelihood that government should resolve.How to improve the monitoring and reliability in the circulation of meat products,to realize the competitiveness of enterprises and social stability in the development of win-win situation, there is an urgent need for system-depth theoretical studies.Specifically,the thesis main includes:first,surveying a meat processing enterprises.Analyzing the hidden danger of sales physical distribution in meat product supply chain,studying the characteristic of sales physical distribution,putting forward a response to manage the meat sales physical distribution.Second,using the RFID technology to to mark and to track each animals.Recording the data through rasing,supervision, slaughtering and sale.Based on the records,according to the rules on the key points of physical distribution monitoring and managing the subjects. Includes the related standard system and the entity technology.Third, according to the key points of circulation using the GO-FLOW to construct a physical distribution system model and analyzing it.Fourth,using the FTA qualitative to analyze low reliability links and proposing the measures. Fifth,analyzing the entire supervisory system hierarchy-Fuzzy Comprehen -sive Safety Assessment.Calculating the security coefficient of the overall system;Finally,through applying this method to an enterprise confiming it’s feasible.
