古代饮食赋初探

【摘要】 本课题主要以陈元龙《历代赋汇》中有关“饮食”题材的赋作为研究对象,辅以《赋海大观》中有关“饮食”题材的赋,结合关于饮食赋的研究资料和有关饮食的基本知识,从饮食赋的分类情况、文学特征和文化特征三个方面对这类赋进行较全面系统地整理和研究。《历代赋汇》将赋分为38类,其中饮食是收录了从西汉时期到明代的饮食赋共50篇,其中正集42篇,补遗7篇,附逸句1篇,并且没有对饮食赋再做进一步分类。本人研究发现,并不是所有《历代赋汇》中划分到饮食类的赋作都与饮食有着最密切的相关,它们有的以描写饮食为主,抒情为辅,有的赋作目的在于抒情,而描写饮食只是载情之托,甚至还有一篇《寒食散赋》完全与饮食无关,属于医药类赋作。因此本人参照古人饮食赋分类方法,将属于饮食类赋范畴的49篇赋作重新划分为五类:酒类赋、茶类赋、蔬菜类赋、佳肴类赋和杂类赋。其中,酒类赋20篇,茶类赋4篇,蔬菜类赋6篇,佳肴类赋5篇,杂类赋14篇,而杂类赋中又含数小类:羹类赋、饼类赋、形盐赋、饮食态度赋、节气类、食疗赋、小食赋。由于《历代赋汇》中的饮食赋以唐宋时期居多,因此不可避免地呈现出与唐宋时期赋特点相对应的特点:句式上骈散并用;注重赋文本语言的知识性;写法上以抒情言志为主。本人认为这三大特点中,尤为值得注意的是“注重赋文本语言的知识性”。因为对赋的研究往往更加关注文学上的特征,却》常常忽视其起的某些传播知识文化的作用。饮食赋作者常常引用古书或者以亲身经历作为支持自己赋作论说的有力证据,如苏轼《服胡麻赋》,更有如朱德润《轧赖机酒赋》这样详细介绍制酒过程的赋作,其中对蒸馏法的描述成为现今对古人制酒法历史的有力佐证。饮食文化是从饮食发展的层次上和饮食的角度对自然科学、社会科学及哲学的呈现和反映,本人通过研究认为,49篇饮食赋主要呈现出了反映社会历史面貌、反映社会礼节习俗和反映士人饮食观念三个文化特征。而反映社会礼节习俗这个特征不仅非常有趣,而且最具有进一步挖掘内涵的意义。49篇饮食赋中表现社会礼节习俗的赋作在数量上虽然不是特别多,但是却包含了节庆活动、友人相赠、答谢和筵宴命题四个主题。由此可以看出饮食赋文化层次的丰富性,如若将研究的范围进一步扩大,想必能挖掘出更广阔的文化主题。通过对《历代赋汇》中饮食赋的研究可以体现出人类社会从满足生存需要到追求精神享受这一复杂的升华过程,而且赋作为一种介于诗歌和散文之间的文学体裁,具有诗的和协音韵、整齐句式,又有散文的流畅气势、铺张描写,韵散兼行,长短不拘。以这样一种特殊的文学的手法生动地记载和反应了这一变化过程,并且在字里行间倾注了作者的饮食观、养生观、世界观,甚至这些口舌之欲与当时社会农业的发展和人们的精神追求都产生了交叉作用。因此通过研究此类赋,不仅能充分证明“赋”这种文学体裁具有丰富深刻的社会内容和现实意义,还能充实赋文学的发展历史。更多还原

【Abstract】 Fu Sitology topics for the development of coross-cutting style has always been given. Fu Sitology topics hold the unique philosophy of life and aesthetic ideals belonging to the Chinese. My investigation includes the system of Fu Sitology, literary character of Fu Sitology, civilization of Fu Sitology.So this paper is divided into three chapter. Chapter one,it states briefly the concept and reseach scope. Some Fu Sitology are totally unrelated to diet, medicine is given for, so the number of true meaning of the Fu Sitology is only 49 in Fu Department history. I divided these Fu Sitology topics into five parts by referencing to the ancient classification : Fu Inebriant , Fu Tea, Fu Vegetable, Fu Regale and Fu Miscellany.Analysis of the second paragraph of my main literary features of Fu Sitology. Due to a lot of Fu Sitology assembled in two ages, therefore, characteristics and age-related literature. There three characters: parallel and essay mixed, language knowledge, Yan-zhi lyric. Since ancient times, scholars always more concerned about the characteristics of literature, but ignored the role of the dissemination of knowledge. Many Fu Sitology topics played a role in the dissemination of knowledge actually.Chapter three, Food culture is the show and reflect for natural sciences, social sciences and philosophy from the level of development from the diet and eating point .There are three characters : reflect the face of social history, reflecting the social customs and manners and the concept of the three scholars and cultural characteristics of diet.By studing Fu Sitology topics , that they not only full of rich content and practical significance of social, but also from the perspective of literature greatly expand the cultural connotation of Chinese food.更多还原
