【摘要】 在我国北方的大部分地区,饺子是人们最为喜爱的节庆吉祥食品与家常食品的典型代表。它不仅由于自身别具一格的风味特色,成为人们心目中的美味食品,而且更由于它在千百年的历史传承中,形成了以饺子为中心内容的饮食习俗,积淀产生了内涵丰富的象征意义。研究和解读中华民族的“饺子情结”,几乎可以全方位地透视中国老百姓在数千年的生活历史发展中所形成的饮食思想与饮食观、审美情趣、生活态度,乃至由此所折射出来的民族心理与精神状态。为了能全面而又系统地对中国饺子的历史、饮食习俗与象征意义进行探讨,本文将从以下几个方面展开研究与论述。导言,本论文选题的要因及当前对这一问题的研究动态与成果。论文的主体内容分为三个部分:第一部分,饺子在我国的饮食渊源。运用已有的考古成就与出土的实物,结合历史文献资料,以及前人对这一问题的研究成果,梳理饺子的起源与发展脉络,在此基础上对一些食俗习惯的形成进行介绍。第二部分,饺子在我国民间的各种饮食习俗事象。分别以岁时节日和人生重大礼仪活动为线索,内容包括饺子饮食习俗的形成、表现形式与功能等方面。通过对饺子与民间传统年节食俗文化之渊源、饺子与传统人生礼仪食俗文化的事象表征的研究,使我们进一步对饺子的民俗文化内涵有了深刻的了解与认识。第三部分,饺子在国民生活中的象征意义。主要从饺子食俗象征意义形成的心理因素分析和在此心理作用下的应用进行论述。在第一部分论述的基础上,进一步对饺子成为国民美好生活象征等符号意义的心理进行分析,然后对饺子食俗文化象征意义的外延性在民间日常生活中的应用进行扼要的总结。结论,对本论文的中心论点进行扼要总结与综述,通过对中华民族种种食饺习俗的研究与透视,充分揭示出蕴含其中的数千年来所形成的华夏民族更深层的象征意义、文化内涵及其审美心理特征。更多还原

【Abstract】 In the most northern districts of our country, the dumpling is the typical representative of the favorite festival and domestic foods, which is not only the delicious food in people’s mind because of its distinctive flavor, but also has become the centre of the eating custom as a result of thousands of years’ development. It also has a rich significance. We can understand the Chinese people’s eating thoughts and outlook, aesthetic appeal, life attitudes ,and even the nation’s psychological and spiritual states formed in thousands of years’ living history through the research on the Chinese nation’s dumping complex.In order to explain the history,eating custom and the sympolic significance of the Chinese dumpling completely and systematically, this thesis will describe as follows:The first part explains the origin of the dumpling in our country. By using the archaeological achievements and the unearthed material objects, the author hackles the origin and the development of the dulmpling as well as combining with historical documentary materials and the research achievements of the predecessors. And then introduces the forming of some eating habits.The second part describes the various using of the dumplings in our country’s folk eating custom by the clue of the important etitquette activities of human life and festivals. This part includes the forming of the eating custom of the dumpling and its manifestation and its function. We can understand the dumpling’s folk cultural intension further from the research on the origin of eating dumplings on traditional folk festivals, the symbol of the dumpling and the traditional life etitquette and the eating custom culture.The third part analyzes the dumpling’s symbolic significance in the people’s life. This part is to expound by analyzing the psychological factors for the forming of the dumpling’s symbolic siginificance and its application under its psychological effect. On the basis of the first part, the author analyzes the psychology of the dumpling as a symbol of the people’s happy life further, then makes a brief summary of the extended application of the dumpling’s eating custom symbolic siginificance in the folk daily life.At last, the thesis makes a brief summary for the central proposition. Through the research on various dumpling’s eating custom of the Chinese nation, it fully reveals the deep symbolic significance, cultural intension and its aesthetic psychological features of the Chinese nation formed in the thousands of years’ history.更多还原
