温室生态餐厅水景观的营建

【摘要】 随着生活水平的不断提高,人们对饮食的需求由单纯的味觉满足发展到感官全方位的享受,就餐环境的重要性日益突出,营造出优雅的环境、温馨的气氛,将有利于人们愉快地进餐。而温室生态餐厅很好地解决了这一问题。生态餐厅是极具景观特色的生态建筑,它以温室技术为基础,运用了多种设计和技术手段,大规模水体的引入,满足了人们赏水亲水的需要,为人们营造了景色优美,环境舒适的就餐环境。本论文根据温室生态餐厅发展的现状,主要运用调查实例、实地实验、数据统计分析、对比、民意测验等方法完成论文。针对问题和不足提出温室餐厅水景观的营建方法,其结果和结论如下:1.水体规模:水域面积的确定将对温室生态餐厅园林景观的营建有重要的指导意义。在参考温室生态餐厅的场地面积、温室内的环境因子影响、人体舒适度和室外生态环境营建控制标准的基础上,通过对多个实例的调查,得出温室生态餐厅中水体用地规模控制宜为餐厅总用地面积的9%~10.5%较为理想,当水体用地规模大于等于9%同时小于10.5%时,水体用地规模合理;当水体用地规模大于10.5%或水体用地规模小于9%时,水体用地规模不合理;当水体用地规模等于10.5%时,水体用地规模将达到最佳。2.水景形态:在温室生态餐厅中可应用静态水景、动态水景和容器式水景三种形式。静态水景在餐厅中应用的形式为水池、池塘等,它平静幽深,可以缓冲和软化生态餐厅的硬质界面;动态水景在餐厅中的应用形式为溪流、瀑布、叠水、水帘、水幕、壁泉、喷泉等等,它明快活泼、形声兼备,既增加了餐厅内空间的生机,又能满足视觉艺术的需要;而容器式水景更能起到很好的装饰作用。3.意境营造:通过模拟“咫尺山林”的创作手法、水景文化、寓意等手法在温室生态餐厅的封闭的有限空间内创造无限的山林意境。4.景观水循环:温室生态餐厅中,景观用水应可持续利用,可以通过利用收集的雨水和经过处理的中水等方法,对水景进行生态化处理,体现生态餐厅的“生态”理念。5.温室生态餐厅水景观评价:选用二级模糊数学综合评判法,评价等级的得分标准值定义为9,7,5,3,1分,综合得分越低,表明餐厅水景观的价值越低。本篇论文提出了若干关于水景观营建的方法和注意事项来创造健康、完善的就餐环境。希望通过本文的研究,能够为今后温室生态餐厅的景观建设及经营管理提供一些建设性和指导性的建议。

【Abstract】 With the constant improvement of the living standards, the need of people’s diet had already developed from pure taste content to all-round sensory enjoyment, the importance of dining environment is increasingly stressing, constructing elegant environment and warm atmosphere will advantage people’s pleasantly dining. However greenhouse ecological restaurant had solved this problem well. Ecological restaurant is a ecological building of extremely having landscape features, it is based on the greenhouse technology, using a variety of design and technical means and introduction of large-scale water and plant for people to create a beautiful environment and comfortable dining environment. According to developing status of the greenhouse ecological restaurant, this article mainly use example surveys, practically experiments, statistical data analysis, contrast, public opinion polls. To solve these problems and shortcomings, had created some methods about the waterscape construction of greenhouse restaurant, and concluded as follows:1. Water scale: determination of water area has important guiding sense in greenhouse ecological restaurant landscape construction. On the basis of the consulting greenhouse ecological restaurant’s space, impact of environmental factors, human comfort level and the control standards of outdoor ecological environment construction, through surveying and analysis induction of many examples, conclude that the scale control of the water land is 9%~10.5% better, when water scale is bigger than and equal to 9%, and when water scale is smaller than 10.5%, water scale is reasonable. When water scale is bigger than 10.5% or water scale is smaller than 9%, the water scale is unreasonable. When water scale is equal to 10.5%, water scale is the best.2. Waterscape shape: greenhouse ecological restaurant may use static waterscape, dynamic waterscape, and vessel-waterscape. Application form of static waterscape is pond and pool in the restaurant, it is tranquil and profound, and may buffer and soften hard interface of ecological restaurant; application form of dynamic waterscape is stream, waterfall, folding water, water curtain, water screen, wall spring, fountain, it is bright and lively, both increases in the vitality of restaurant space, and can meet the needs of the visual arts. However vessel-waterscape can play a part in fairly decoration.3. Create a mood: through using developing themes and water culture, implication in the limited space of greenhouse to create unlimited artistic garden environment. 4. Landscape water cycle: in the greenhouse ecological restaurant, landscape water should sustainedly use, it may use the collection of rainwater and after processing water to ecological handle of waterscape, thus embodies the ecological concept of ecological restaurant.5. Evaluation of the greenhouse ecological restaurant watering: using second-level fuzzy mathematics comprehensive evaluation, the standard of evaluation rating score defined as 9,7,5,3,1, the synthesis score is lower, indicated that the value of waterscape is lower. This thesis made a number of waterscape construction methods and issues to create healthy and improved dining environment. Hope that research of the paper could provide constructive recommendations and guidance to the future landscape construction and management of the greenhouse ecological restaurant.
