紫外光照射下胆固醇及食品中胆固醇氧化物气相色谱分析

【摘要】 胆固醇氧化物具有多种不良生理作用,可造成主动脉平滑肌细胞严重损伤,导致动脉粥样硬化,很强的细胞毒害性、致突变性、可疑致癌性以及抑制胆固醇合成等性质。本文共分四章:第一章对食品中胆固醇氧化物的研究进展,包括胆固醇氧化物的形成、种类及含量、加工过程中应采取的预防措施以及分析检测方法等进行了综述,共引用文献31篇。第二章用毛细管气相色谱法对烤鱼片中微量胆固醇氧化物进行了测定,研究优化了胆固醇氧化物的样品处理方法。第一节考察了Al2O3微型固相萃取柱分离净化胆固醇与胆固醇氧化物的可行性,第二节用硅胶微型固相萃取柱分离富集实际样品(烤鱼片)中胆固醇氧化物并对其含量进行了测定。第三章考察了紫外光照射下胆固醇的氧化情况,证明了在一定强度紫外光照射下可有胆固醇氧化物产生。第四章应用填充柱气相色谱法对安宫牛黄丸中的冰片含量进行了测定。

【Abstract】 Cholesterol oxidation products have some adverse biological effects, such as injuring aortic smooth muscle cells, lead to atherosclerosis, cytotoxicity, mutagenicity, suspicious carcinogenicity and inhibition of cholesterol biosynthesis. The paper consist of four chapter, In chapter 1, the research advances of cholesterol oxidation products in food was reviewed, including the formational mechanism of cholesterol oxidation products, its species, contents and preventives as well as analytical methods and results comes from COPs forming during in processing or storage. Thirty-one literatures were quoted in this review. In chapter 2, trace cholesterol oxidation products were detected in roast fish by capillary gas chromatography, and treatment methods of COPs were optimized. In the first part, the feasibility of separation and purification of cholesterol and cholesterol oxidation products on Al1O3 micro- SPE was studied. In the second part, separation of cholesterol oxidation products on silica micro-SPE from roast fish was studied and the amounts of COPs were detected. In chapter 3, the oxidation of UV-light irradiation on cholesterol oxidation was researched. In chapter 4, determination of borneol in angongniuhuang capsule by packed gas chromatography.
