【摘要】 在卵黄脂蛋白过不饱和脂肪酸过氧化体系、亚油酸过氧化体系以及牛肉匀浆、绞碎羊肉中研究了羊脾脏提取液的抗氧化活性，实验表明：羊脾脏提取液在以上体系中均表现出抗氧化活性，但其活性与实验体系密切相关；这种活性是多种成分协同作用的结果；脾脏提取液中除了抗氧化活性成分外，同时存在促氧化成分，因此，脾脏提取液稀释后，表现出更强的抗氧化活性，但活性与稀释倍数没有线性关系；脾脏提取液的抗氧化活性与基质的pH值没有密切的关系；热处理的脾脏提取液仍然有活性，但活性受到影响。本文从全新的角度探讨脾脏中的活性物质，为进一步研究这种潜在的天然抗氧化剂提供参考。更多还原

【Abstract】 Extract from sheep spleen showed antioxidative activity in different systems,including yolk lipoprotein，linoleic acid， beef homogenates and salted ground mutton. In addition to synergistic components, antioxidant was speculated as protein or enzyme. Antioxidative activity of extract was affected little by pH of the system. Diluted extract containing antioxidants and prooxidants has higher antioxidative activity and could have potential as a natural antioxidant.更多还原
