食用油气相色谱指纹图谱鉴定技术及其应用研究

【摘要】 食用油气相色谱指纹图谱鉴定技术及其应用研究,是在我国现代经济快速发展、人民生活急切需要以及保障广大食用油消费者身体健康的需要的前提下提出来的。1.研究目标(1)研究食用油气相色谱指纹图谱鉴定的检测方法,建立天然动植物食用油脂肪酸GC指纹分析图谱,为食用油品质控制,质量安全鉴定提供方法。(2)研究食用油气相色谱指纹图谱鉴定的检测方法,探索食用油脂的气相色谱分析的最佳分析条件以及影响检测的主要因素。(3)研究食用油脂的GC指纹图谱解析方法,重要的是应用GC指纹图谱判别食用油脂的安全性,理解进行食用油气相色谱指纹图谱检测方法研究的重要性。2.研究内容(1)规范化食用油特征物的提取方法程序及其指纹图谱的鉴别方法;(2)食用油气相色谱指纹图谱的解析研究;(3)食用油指纹图谱的相关性研究;(4)食用油气相色谱指纹图谱检测方法在油脂质量控制中的应用。3.研究思路和方法在整个课题的研究中,采用许多方法联用,诸如:抽样法、统计法、调查法、追因法、经验总结法等,这些方法还要与列表法和图示法等结合使用,更加有效的实现研究目标。4.研究结果研究工作中,以常见食用油脂为研究对象,研究获得主要结果:(1)提出确定和规范油脂特征总提物获取程序;(2)获得了油脂样品特征总提物的指纹图谱及其识别方法;(3)完成了对不同类型食用油指纹图谱的解析研究;(4)获得了油脂特征总提物以及各种组成脂肪酸成分的组成信息;(5)完成了常见食用油、酸败食用油、掺伪食用油和泔水油成分和其他油脂气相色谱指纹图谱的相关性研究;(6)提出了构建常用油脂气相色谱指纹图谱库方法和基本模式;5.研究结论(1)确立规范的油脂特征总提物获取程序和方法,GC指纹图谱检测技术能适用于处理大批量的食用植物油样品。(2)研究结果表明,气相色谱鉴定技术可用于食用油质量安全的快速检验,可作为不同类型的食用油定性和定量的判断依据。(3)实验结果表明GC指纹图谱检测重现性和再现性很高,说明检测方法的可靠性和可信度是很高的,该研究具有较高的实用性,可以看出,食用油气相色谱指纹图谱鉴定方法的研究意义深远而重大。

【Abstract】 Edible oil GC fingerprint identification technology, is put forward under the premise of the initiative which is the requirement of the rapid development of China’s modern economy as well as people lives’urgent need to protect the physical health of oil consumers.1. Research objectives(1) to research appraisal of detection technology of edible oil by gas chromatographic fingerprint, to set up a natural animal and plant oil fatty acid GC fingerprinting patterns and to offer methods for the edible oil’s quality control and quality safety identification.(2) to research detection technology and application of edible oil by gas chromatographic fingerprint, to explore favorable analytic conditions and the impact of the main factors mediating detection of edible oils and fats by gas chromatography.(3) to research analysis method of edible oils and fats in the GC fingerprint, to adopt the application of edible oils and fats GC fingerprint identification security, to understand the importance of research on the oil gas chromatographic fingerprint detection technology.2. Research contentsEdible oil GC fingerprint identification technology is a very practical subject, the main contents are:(1) the study of edible oil extraction process and the methods of its fingerprint’s establishment for the characteristics of standardized edible oil;(2) the analysis of the edible oil GC fingerprint;(3) the correlative study of the edible oil fingerprint;(4) the popularization and application of quality control for edible oil GC fingerprint technology.3.Reseach methodologyIn the study of the topic, adopt many methods combined, such as:sampling, statistics, survey, tracking, experience summary, etc. These methods also combine with listing and graphic representation to achieve the research goal effectively.4. Research results(1) It has identified and standardized the procedures of the characteristics of extract(2) It has obtained the fingerprint of the general extract of standardized samples;(3) It has completed the analysis of fingerprint;(4) It has obtained the composition information of general extract and ingredients of various fatty acid;(5) It has completed a correlative study of GC fingerprint for common standard of cooking oil, edible oil rancidity, adulteration of edible oil and illegal cooking oil as well as other oil;(6) It has proposed the establishment of chromatographic fingerprint library and the standard database model;4. Research conclusions (1)The findings established the procedures and methods of oil features extractive and GC fingerprint detection technology could be applied to deal with large quantities of edible oil samples.(2) The findings indicated that GC fingerprint detection technology could be adopted in instant quality inspection and the quality and quantity judgments of edible oil could depend on GC fingerprint detection technology.(3) The findings showed that GC fingerprint detection technology had a higher degree of reappearance and recurrence, which meant detection technology with a higher degree of reliability. This finding was very practical and the study of oil gas chromatographic fingerprint identification technology must have a far-reaching and significant importance.
