UHT纯牛奶质量改进方法与应用研究

【摘要】 超高温灭菌(ultra heat treated,UHT)纯牛奶的质量备受消费者的关注,本文在对UHT纯牛奶质量管理现状进行调查的基础上,明确了本文的研究意义和技术路线,以UHT纯牛奶的生产过程为研究对象,取得了如下研究成果:1.笔者在深入了解UHT纯牛奶企业持续质量改进现状的基础上,分析其问题的原因。本文针对UHT纯牛奶企业特点,建立了UHT纯牛奶持续质量改进模型,明确了模型中UHT纯牛奶持续质量改进平台,选择了适合UHT纯牛奶持续质量改进的方法,给出了UHT纯牛奶企业建立持续改进机制的关键点,并给出了应用该持续质量改进方法的思路,而且指出应用该方法时应该注意的问题。2.原料乳中细菌总数严重影响乳制品质量。针对传统方法检测原料乳细菌总数时间长,操作复杂、及快速检测设备费用昂贵等缺陷,本文首先基于抽样技术研制了获取原料乳载玻片,然后建立了基于支持向量机(Support Vector Machine,SVM)分类技术的原料乳细菌总数分类检测系统。3.本文提出了一种改进满意度函数的方法来解决质量工程中的三响应实验设计优化问题。该方法考虑了各个响应变量的方差、相关性,弥补了传统的满意度函数法的不足。4.为了改进超高温灭菌(UHT)纯牛奶的质量,本文利用改进的满意度函数,结合RSM对UHT纯牛奶的瞬时超高温杀菌的工艺参数进行优化,建立了关于d值的二次多项数学模型,得到UHT纯牛奶杀菌的最佳工艺参数,为UHT纯牛奶瞬时超高温杀菌的工艺参数优化奠定里理论基础。最后,基于本文的UHT纯牛奶的质量改进方法,对UHT纯牛奶质量的改进有明显的提高。

【Abstract】 The ultra heat treated(UHT) milk quality is paid a good deal of attention by consumers.Based on an extensive survey of the current quality management situation of the UHT milk, manufacturing process of UHT milk is taken as the object of study in this paper.The main contents and achievements of this paper include the followings:1.To maintain the dominant position of UHT milk in the intense market competition, based on an survey of continuous quality improvement(CQI) situation of UHT milk manufacturing industry, the reasons of the problems are analyzed. According to the characteristics and problems of UHT milk manufacturing companies, the CQI model of UHT milk is established,the platform improving the CQI model of UHT milk is set up, the suitable CQI method of UHT milk is chosen and the key points of the CQI mechanism are put forward. Finally, the steps applying this method are provided, and the probable problems while applying this method are pointed out.2. The total sum of bacteria in raw milk has much effect on the quality of dairy product. The present methods applied in the detection of the total sum in raw milk are not only time-consuming but also complex in operating. In addition, the quick detection equipments are very expensive. In this paper, microscope glass slide in obtaining raw milk smear is designed based on sampling technology, and then the classification detection system of the total sum in raw milk based on SVM classification technology is established.3. This paper proposes a method with an improved satisfactory function to solve three-response optimization problems in quality engineering. The proposed method takes into consideration not only the effect of variance of three-response variables, but also their correlations among three-response variables, so that the deficiency of the desirability functions is made up.4. To improve the quality of UHT milk, the improved satisfactory function is utilized. It optimizes the techniques parameters of the instantaneous ultra high temperature feature of UHT milk combining RSM. A second order quadratic equation for d value is built. The optimum techniques parameters are elicited. The foundation of the theory optimizing the technological conditions of the instantaneous ultra high temperature milk sterilized is established.Conclusively, based on the UHT milk quality improvement method presented in this paper, the quality of UHT milk is significantly improved.
