论汴京对饮食业历史的贡献
Talks on Bianjing’s Contribution to the History of Diet
【摘要】 汴京饮食集中反映了古代都市酒店业前所未有的繁荣昌盛,可以说是世界范围内成规模的酒店业的开端,引起当代国际社会的关注和赞扬。另一成就是北馔、南食、川饭、素食四大风味菜系在汴京诞生,成为历史上第一座风味美食之都。源自汴京、流传至今的糖炒栗子和宋嫂鱼羹,已成为北宋灭亡的物质符号,衍生了历史教育功能。汴京改变、丰富了中国人的饮食生活,是中国饮食史上的一个关键节点,首先在开封市民中,将大众的饮食需求从果腹提高到享受,并在中华文明的饮食基础上注入了浓重的汴京元素。
【Abstract】 Diet in Bianjing reflects unprecedented and prosperous hotel industry in ancient time,which can be said to be the beginning of large-scale hotels worldwide,and attracts highly international attention and praise.The other achievement in Bianjing is that four styles of cooking,Shandong cuisine、Cantonese、Sichuan cuisine and Jiangsu cuisine came into being here and makes Bianjing the first diet city in history.Two kinds of food,marrons glaces and Mrs.Geng song,dating back to the Northern Song,Bianjing,becomes material signs of this ruined dynastry,and therefore they are given educational function.Bianjing changes and enriches Chinese diet and is an important connection in the history of Chinese diet.It improves the public’s food demand from just being full to enjoying themselvs,and mixes Chinese diet with massive Bianjing’s elements.
