一起沙门菌引起的食物中毒情况分析
Analysis of a Food Poisoning Incident Caused by Salmonella
【摘要】 目的 对一起沙门菌食物中毒事件进行流行病学分析,为预防控制类似事件提供依据。方法 进行流行病学调查分析和现场卫生学调查,采集疑似病例粪便样本、可疑食物样本进行实验室检测。结果 共发现病例8例,其临床表现以发热(7例,87.5%)、腹泻(7例,87.5%)、腹痛(8例,100%)、呕吐(5例,62.5%)等症状为主;实验室检测结果显示8例粪便样本中4份检出鼠伤寒沙门菌,3份可疑食物样本中2份检出鼠伤寒沙门菌。结论 本次食物中毒事件由鼠伤寒沙门氏菌污染引起,生熟食品交叉污染和存储方式不当是此次事件发生的危险因素。
【Abstract】 Objective To carry out an epidemiological analysis of a Salmonella food poisoningincident, and to provide basis for prevention and control of the similar public health events.Methods Epidemiological survey and field hygienic investigation were performed to collect fecal samples and suspicious food samples for laboratory testing.Results A total of 8 cases were found in this investigation.The main clinical manifestations were fever(7 cases, 87.5%),diarrhea(7 cases, 87.5%),abdominal pain(8 cases, 100%),and vomiting(5 cases, 62.5%).Laboratory test results revealed that Salmonella typhimurium was detected in 4 of 8 stool samples and in 2 of 3 suspicious food samples.Conclusion This food poisoning incident was caused by Salmonella typhimurium contamination, and cross-contamination of raw and cooked foods and improper storage were the risk factors for the occurrence of this incident.
