云和雪梨气调贮藏效果研究

【摘要】 通过对气调贮藏的云和雪梨分阶段进行成熟期的理化指标观察记录,分析云和雪梨在采后贮藏过程中商品性状的变化规律,探索云和雪梨最佳的气调贮藏期。试验表明,经气调贮藏186 d,云和雪梨仍能保持良好的商品性,果皮有色泽,无明显病害,果肉可溶性固形物含量10.60~12.90 Brix,硬度5.55~9.20 kg/cm~2,口感较为松脆、淡甜、汁多。云和雪梨气调贮藏可达186 d左右,比普通商业冷库保鲜延长3个月左右,气调保鲜贮藏效果较好。

【Abstract】 The physical and chemical indexes of "Yunhe" pear were observed and recorded in different stages through controlled atmosphere storage, in order to study the change rule of commodity characters and explore the best storage period. The results showed that after controlled atmosphere storage for 186 days, "Yunhe" pear could keep good commercial quality, the fruit surface was colorful without obvious disease. The content of soluble solids in the tested pulp was between 10.60-12.90 Brix,the hardness was between 5.55-9.20 kg/cm~2 and the taste was crisp, light sweet and juicy. The modified atmosphere storage period of "Yunhe" pear can reach about 186 days, which is about 3 months longer than that of commercial cold storage. The effect of modified atmosphere storage is obvious.
