关于高原牦牛乳制品质量安全管理控制的分析研究
Analysis and Research on Quality and Safety Management and Control of Plateau Yak Dairy Products
【摘要】 高原牦牛酸奶营养丰富、口感好,是人们日常补充营养的重要物质。牛奶中添加剂超标、重金属污染及抗生素残留等安全风险因素已然成为人们关注乳制品安全的关键点。本文通过对生鲜乳制品、乳制品的加工生产及运输储存等各个环节的安全管控进行分析阐述,提出安全风险因素的管控方法,为乳制品生产企业的发展提供强有力的理论基础。
【Abstract】 Plateau yak yogurt has rich nutrition and good taste, which is an important substance for people’s daily nutrition supplement. The safety risk factors such as excessive additives, heavy metal pollution and antibiotic residues in milk have become key points of concern for the safety of dairy products. This paper analyzes and expounds the safety control of fresh dairy products, processing, production, transportation and storage of dairy products and other links, and puts forward management and control methods to solve safety risk factors, which has provided a strong theoretical basis for the development of dairy production enterprises.
