建立口岸食品生产加工企业HACCP体系的探讨

【摘要】 [目的]加强口岸食品生产加工企业的卫生管理,保障口岸食品安全。[方法]通过分析国内外食品生产加工企业的现状,提出口岸食品生产加工企业应建立的主要的前提计划,并对可追溯体系进行初步分析,提出口岸食品生产加工企业HACCP的应用。[结果]口岸食品生产加工企业首先必须满足相关的卫生法规要求;其次,应建立完善的前提计划,包括可追溯体系,并在此基础上建立并有效实施HACCP计划。[结论]口岸食品生产加工企业可通过建立实施前提计划和可追溯体系,确保HACCP体系有效运行。

【Abstract】 Objective To strengthen the sanitary managemment of the food processing enterprises on the border,ensure the safety of the bor- der food.Methods Through the study on the current conditions of the flld processing enterprises on the border,the main prerquisite programs which should be established by the food processing establishments on the border was provided,and the traceability system was analyszed,the im- plement of HACCP system in food processing establishments on the border was provided.Results First,the related requirement of the sanitation regulations should be met by the food processing establishments on the border.Second,the prerequisite progran should be established,including the traceability system.The HACCP system can be established and effectively implemented.Conclusion The prerequisite program and the trace- ability system should be established and implemented to ensure the HACCP system implemented effeetively in the food processing establishments.
