可食性膜对夏黑葡萄保鲜效果研究

【摘要】 通过正交设计方法,研究了不同可食性膜复合涂膜对夏黑葡萄的贮藏品质的影响。通过可食性膜的浸泡涂膜、聚乙烯保鲜膜包装、低温冷藏处理,测定不同可食性膜的复配对夏黑葡萄贮藏期间生理生化指标的变化。结果表明,1.0%壳聚糖+0.2%明胶+1.0%蔗糖酯+0.5%甘油+0.08%苯甲酸钠的复配涂膜,结合聚乙烯保鲜膜包装和低温冷藏(0.5℃),对夏黑葡萄有着较明显的保鲜作用,其保鲜期可达75d。

【Abstract】 Effect of different edible coatings on storage quality of summer black grape treated was studied by orthogonal experimental design.Physiological and biochemical indexes of summer black grape during storage affected by immersion of edible coating,package with polyethylene film and cooling storage were investigated.The result showed that when coating summer black grape with edible coating of 1.0% chitosan+0.2% edible-gelatin+1.0% sucrose ester + 0.5% glycerine+0.08% sodium benzoate,then with combination of package with polyethylene filmand stored at 0.5℃,the products could store over 75d.
