石家庄市市售食品食源性致病菌调查结果分析
A study of the distribution of foodborne pathogenic bacteria from food marketed in Shijiazhuang City in Hebei Province
【摘要】 目的了解河北省石家庄市市售食品中食源性致病菌的污染情况,为避免食品中毒事件发生提供指导。方法采集河北省石家庄市收集生肉类、熟肉类、水产、冷菜、甜品及奶制品食品样本,按照《食品卫生微生物学检验方法》对常见食源性致病菌进行检测。结果共采集石家庄市市售食品肉类、熟肉类、水产、冷菜、甜品及奶制品等食品样本392份,共检出食源性致病菌98株,总检出率为25.00%,致病菌分别为副溶血性弧菌、金黄色葡萄球菌、沙门菌和单增李斯特菌,检出率分别为9.44%(37株)、8.42%(33株)、4.08%(16株)和3.06%(12株)。食品样本生肉类、熟肉类、水产品、冷菜、甜品及奶制品食源性致病菌检出率分别为18.25%(25/137)、12.50%(6/48)、32.88%(24/73)、33.87%(21/62)、34.62%(18/52)和20.00%(4/20)。在甜品、冷菜以及奶制品样本中,金黄色葡萄球菌的检出率均为最高,达到了34.62%、20.97%和10.00%。食源性致病菌在农贸市场、饭店、大型超市、蛋糕店、水产品市场中的检出率分别为19.51%(16/82)、32.35%(22/68)、17.19%(22/128)、34.62%(18/52)和32.26%(20/62)。结论石家庄市售食品中食源性致病菌有副溶血性弧菌、金黄色葡萄球菌、沙门菌和单增李斯特菌,食品污染严重。
【Abstract】 Objective The distribution of foodborne pathogenic bacteria was studied in food marketed in Shijiazhuang City,Hebei Province in order to help avoid outbreaks of food poisoning. Methods Three hundred and ninety-two samples of marketed food,including raw meat,cooked meat,marine products,frozen foods,desserts,and dairy products,were collected in Shijiazhuang City,Hebei Province.Samples were tested for Salmonella spp,Vibrio parahaemolyticus,Listeria monocytogenes,and Staphylococcus aureus. Results V.parahaemolyticus was the most prevalent pathogenic bacterium found in the 392 food samples,followed by S.aureus,Salmonella spp.,and L.monocytogenes.S.aureus was most prevalent in desserts and frozen foods,and V.parahaemolyticus was most prevalent in marine products.Foodborne pathogenic bacteria were less prevalent in the other samples.Foodborne pathogenic bacteria were detected in 82 samples from farmers’ markets(19.51%),68 samples from hotels(32.35%),128 samples from large supermarkets(17.19%),52 samples from cake shops(34.62%),and 62 samples from markets for marine products(32.26%).Conclusion The foodborne pathogenic bacteria that were detected in the Hebei region were V.parahaemolyticus,S.aureus,Salmonella spp.,and L.monocytogenes.This indicates that food contamination is relatively serious.Pathogenic bacteria were also highly prevalent in markets.
